Several of my guests and facebook fans have been asking about my recipes, so every Monday I will be posting a new recipe to share with you!  Bon Appetite!

Camellia Rose Inn Banana Bread

2 eggs

2 very ripe bananas, mashed

½ c canola oil

¼ c plus 1 tablespoon buttermilk

1 tsp vanilla extract

1 ¾ c all –purpose flour

1  ½ cups sugar

1 tsp. baking soda

½ tsp. salt

1 cup chopped pecans, optional (I don’t use them)


Preheat oven to 350 degrees.  Place eggs, mashed bananas, canola oil, buttermilk, and vanilla in medium mixing bowl and beat with electric mixer until creamy and well blended.  Combing flour, sugar, soda, and salt and add to egg mixture.  Beat at low speed just until all dry ingredients are incorporated.  Stir in pecans (if using them).  Pour batter into lightly greased 8 ½ x 4 ¼ inch loaf pan.  Bake for 60 minutes (I cover mine with 20 minutes to go so the top doesn’t get too brown).  Remove from oven to cooling rack for 20 minutes.  Run knife along edges of pan to loosen and remove from loaf pan and cool on rack.
