Tomato-Basil Quiche

1 cup shredded cheddar cheese

1 cup shredded Monterey jack cheese

1 cup Swiss cheese

1 tbsp flour

6 eggs, beaten

1 tbsp Worcestershire sauce

½ cup half & half

1 medium tomato

1 tablespoon dried sweet basil, or ½ cup freshly chopped basil

Optional, 3 to 6 strips cooked bacon, well drained and crumbled

Preheat oven to 350 degrees.  Coat 8 inch quiche pan with nonstick spray.  Combine cheeses.  In a small bowl, toss 1 cup of cheeses with 1 tablespoon of flour.  Place in bottom of quiche pan.  Spread remaining cheese on top.  Lightly whisk eggs together in bowl, add half & half, Worcestershire sauce, and whisk until frothy.  Pour over cheese and sprinkle with tomato and basil.  (If using bacon also top with bacon)  Bake 35 to 40 minutes or until center is domed and nicely browned.  Let stand out of oven 20 to 30 minutes to allow eggs to set up.  Serves 6 to 8
