Peanut Butter Pancakes




2 cups all purpose flour

3 tablespoons baking powder

¼ teaspoon salt

¾ cup creamy peanut butter

¼ cup honey

2 tablespoons vegetable oil

2 large eggs

2 cups milk


Process all ingredients in a blender until smooth, scrape down the sides once or twice.


Pour ¼ cup batter for each pancake onto a hot, lightly greased griddle.  Cook pancakes until tops are covered with bubbles and edges look cooked; turn and cook on other side.  For peanut butter chocolate chip pancakes add some miniature chocolate chips to the pancake after you pour it on the griddle.  Drizzle with honey!  Don’t just save these to make for the kids, you will LOVE them too!


Makes 16 (4 inch) pancakes
