Camellia Rose Inn

Zucchini Nut Bread

 

 

 

3 cups all purpose flour

1 ½ tsp ground cinnamon

1 tsp baking soda

½ tsp baking powder

½ tsp salt

3 eggs

2 cups sugar

1 cup canola oil

1 tablespoon vanilla extract

2 cups shredded zucchini

½ cup chopped nuts (walnuts or pecans) I don’t put nuts in mine

 

Preheat oven to 350 degrees.  In large bowl combine flour, cinnamon, soda, baking powder and salt.  In another bowl beat eggs, sugar, oil and vanilla.  Add to dry ingredients.  Stir until just combined.  Fold in zucchini and nuts.  Grease and flour (I just use pam) two 8 x 4 x 2 inch loaf pans.  Pour mixture evenly into pans.  Bake 55 to 60 minutes until browned and toothpick inserted in center comes out clean.  Cool 10 minutes and remove to wire rack.  Wrap in foil to store.  Refrigerate to keep for up to a week.  Freezes very well.  Yields 2 loaves.

OVERNIGHT CHALLAH FRENCH TOAST

 

Loaf of challah bread

5 eggs

3 tablespoons sugar

2 teaspoons vanilla

3 cups of  2 % or whole milk

 

3 cups of fresh or frozen berries (I used frozen raspberries, blueberries & blackberries)

 

Crumb topping:

¾ c flour

½ c brown sugar

¾ c quick oats

1 teaspoon cinnamon

½ c (1 stick) butter, softened

 

Spray 9 x 12 pan with pam.  Place torn challah in baking dish, dish should be ¾ full.

In a medium mixing bowl, lightly beat eggs, sugar and vanilla.  Add the milk and mix, pour over the bread.  Cover dish and refrigerate overnight.

Combine crumb topping ingredients in a bowl, cut together until a coarse crumb mixture forms.  Put in a plastic baggie and store in refrigerator until morning. 

 

In the morning, stir the bread in the pan and press down to cover the bottom of pan again.  Sprinkle fruit on top and then the crumb mixture over the fruit.

 

Bake at 375 degrees (if using a glass pan 350 degrees) for about 55-60 minutes, until the center is set.  I put mine in a cold oven.

 

Sprinkle with powdered sugar and enjoy!  The leftovers are also good cold.

Recipe of the Week: Tomato-Basil Quiche

Tomato-Basil Quiche

 

1 cup shredded cheddar cheese

1 cup shredded Monterey jack cheese

1 cup Swiss cheese

1 tbsp flour

6 eggs, beaten

1 tbsp Worcestershire sauce

½ cup half & half

1 medium tomato

1 tablespoon dried sweet basil, or ½ cup freshly chopped basil

Optional, 3 to 6 strips cooked bacon, well drained and crumbled

 

Preheat oven to 350 degrees.  Coat 8 inch quiche pan with nonstick spray.  Combine cheeses.  In a small bowl, toss 1 cup of cheeses with 1 tablespoon of flour.  Place in bottom of quiche pan.  Spread remaining cheese on top.  Lightly whisk eggs together in bowl, add half & half, Worcestershire sauce, and whisk until frothy.  Pour over cheese and sprinkle with tomato and basil.  (If using bacon also top with bacon)  Bake 35 to 40 minutes or until center is domed and nicely browned.  Let stand out of oven 20 to 30 minutes to allow eggs to set up.  Serves 6 to 8

CAMELLIA ROSE INN

VEGETABLE BREAKFAST STRATA

 

1 LARGE SWEET ONION, HALVED AND THINLY SLICED

1 LARGE RED BELL PEPPER, DICED or ROASTED RED PEPPERS

1 LARGE YUKON GOLD POTATO, PEELED AND DICED

1 TBSP. OLIVE OIL

1 (8OZ) BRIE (RIND REMOVED AND CUT INTO ½ IN CUBES, OR 2 CUPS OF

    SHREDDED SWISS

1 (12OZ) SOURDOUGH BREAD LOAF, CUBED

1 CUP OF SHREDDED PARMESAN CHEESE

8 LARGE EGGS

3 CUPS MILK

2 TBSP. DIJON MUSTARD

1 TSP. SEASONED SALT

1 TSP. PEPPER

 

 

Sauté first three ingredients in hot oil 10 to 12 minutes or jus until vegetables are tender and onion slices begin to turn golden.

 

Layer a lightly greased 13×9 inch baking dish with half each of bread cubes, onion mixture, brie or Swiss, and parmesan cheese.

 

Whisk together eggs and next four ingredients; pour half of egg mixture evenly over cheeses.  Repeat with bread cubes, onion mixture, and both cheeses and pour the remainder of egg mixture over.  Cover and chill at least 8 hours or up to 24 hours.

 

Bake at 350 for 45 to 50 minutes or until lightly browned on top and set in center.
