Recipe of the Week: Peaches and Cream Cheese Croissants





Peaches & Cream Cheese Stuffed Croissants



12 mini croissants

8 oz cream slice into 12 slices, or just soften it to spread it on

2 cans of peaches or 6 fresh peaches

Brown sugar


Apricot/Pineapple preserves


6 eggs

1 cup milk

½ c half and half

1 tsp vanilla

1 tsp nutmeg


Spray a 9 x 12 pan with cooking spray.  Slice croissants in half, spread one side with cream cheese, spread preserves on cream cheese, lay peach slices on cream cheese, sprinkle with brown sugar and cinnamon. Make into little sandwiches, put in the prepared pan.  Mix eggs and remaining ingredients together, pour over croissants.  Let sit overnight in the refrigerator or for a couple of hours and bake at 375 degrees for 40 minutes.  Sprinkle with powdered sugar just before serving.

Recipe of the week: Peanut Butter Pancakes





Peanut Butter Pancakes




2 cups all purpose flour

3 tablespoons baking powder

¼ teaspoon salt

¾ cup creamy peanut butter

¼ cup honey

2 tablespoons vegetable oil

2 large eggs

2 cups milk


Process all ingredients in a blender until smooth, scrape down the sides once or twice.


Pour ¼ cup batter for each pancake onto a hot, lightly greased griddle.  Cook pancakes until tops are covered with bubbles and edges look cooked; turn and cook on other side.  For peanut butter chocolate chip pancakes add some miniature chocolate chips to the pancake after you pour it on the griddle.  Drizzle with honey!  Don’t just save these to make for the kids, you will LOVE them too!


Makes 16 (4 inch) pancakes

Recipe of the Week: Ham & Swiss Breakfast Pie





Ham and Swiss Breakfast Pie



1 2/3 cups water

1 cup whipping cream

2 garlic cloves, pressed

2 tbsp butter

1 tsp salt

¼ tsp pepper

2/3 cup uncooked quick-cooking grits

1 ¼ cups shredded swiss cheese, divided

8 eggs, divided

½ lb. cooked ham diced

4 scallions, chopped

½ cup milk


Bring first six ingredients to a boil in a saucepan; gradually stir in grits.  Cover, reduce heat to a simmer, whisking occasionally, 5 to 7 minutes.  Add ½ cup cheese, stirring until cheese melts.  Remove from heat and let stand 10 minutes.  Lightly beat 2 eggs and stir into grits; pour into a lightly greased 10 inch pie plate.


Bake at 350 degrees for 20 minutes; remove from oven.  Increase oven to 400 degrees.


Saute ham and scallions in a pan over medium high heat for 5 minutes or until the scallions are tender.  Layer the ham mixture over the grits crust.  Whisk together milk and remaining 6 eggs; pour over the ham mixture.  Sprinkle remaining ¾ cup of cheese evenly over egg mixture.  Bake at 400 degrees for 35 minutes.  Let stand for 10 minutes, cut into 6 or 8 wedges and ENJOY!
