Recipe of the week: Sausage & Potato Casserole

Sausage and Potato Breakfast Casserole

Serves 6-9


1 pound bulk breakfast sausage

2 tbsp. all purpose flour

1 ½ cups milk (do not use low fat)


1 16oz package of fresh shredded hash brown potatoes (found near the eggs)

Sazon Adobo seasoning, to your liking

4 green onions, finely chopped

1 ¼ cups grated sharp cheddar cheese


Preheat oven to 350 degrees.  Butter 8x8x2 glass baking dish.  Cook sausage in heavy skillet over medium-high heat until brown, breaking into small pieces with back of spoon, about 5 minutes.  Mix in flour, then milk.  Cook until mixture thickens and comes to a boil, stirring occasionally, about 5 minutes.


Arrange potatoes in prepared dish, sprinkle with Sazon.  Top with 1/3 of onions, 1 cup cheese, 1/3 onions, sausage mixture and remaining ¼ cup cheese.


Bake casserole until potatoes are tender, about 45 minutes.  Sprinkle with remaining onions and serve.

Recipe of the week: Blondies






1 c butter, melted

2 c brown sugar, packed

2 eggs, beaten

2 tsp vanilla extract

2 c all purpose flour

½ tsp baking powder

¼ tsp salt

1 c chopped pecans

1 c white chocolate chips

¾ c toffee bits


Line a 13 x 9 pan with parchment paper.  Spray sides of pan with non stick spray and set aside.  In a large bowl, mix together butter and brown sugar.  Beat in eggs and vanilla until mixture is smooth.  Stir in flour, baking powder and salt; mix in pecans, chocolate chips, and toffee bits.  Pour into greased pan and spread out evenly.  Bake at 375 degrees for 30 minutes, until set in the middle.  DO NOT OVERBAKE, AND RESIST CUTTING UNTIL THEY ARE COMPLETELY COOLED.  Allow to cool in the pan before cutting into squares.

Recipe of the Week: Creamy Boursin French Herb Cheese Eggs

4 eggs
1/4 of Boursin Cheese round
Half and Half, 2-3 tablespoons
Sazon Adobe Seasoning, few shakes
Butter for pan

Whisk together, eggs, cheese, half and half, and seasonings. Melt butter in pan, add eggs, cook on medium low, stirring till cooked to your liking.

Serves 2

Recipe of the Week: Garlic Cheese Grits

Garlic Cheese Grits


8 cups of water

2 cups of quick grits (not instant)

¾ tsp or 1 tsp salt (very important to salt your water)

8 oz Velveeta, cubed

½ stick of butter, cubed, real butter

¼ tsp ground red pepper

½ tsp garlic powder


Boil water, add salt, whisk in grits, boil for a minute, turn to low and simmer for about 5 minutes, whisk often.  Add red pepper, and garlic powder, stir.  Add the Velveeta, whisk till creamy, add the cubed butter and whisk again!  Even people that do not like grits, love these!
